I suck at food photography :-( (but I do make very short shortcrust pastry :XD:)

Mince pies

Shortcrust pastry -
4oz wholemeal flour
1oz butter/margerine
1oz lard
(I tend to quadruple this to make two trays of pies, or about 24 pies)

Rub the fat into the flour (with cold hands, using your fingertips - keep it all as cold as possible!) until it looks like breadcrumbs. Add a little water a little at a time until you can make it into a ball (not much water at all), roll it out so it's about 1/4 inch thick, cut out round circles for the bases, and we put star shapes on the tops, but you can put any shape. Make up the pies in a greased pie tray, put the mincemeat in them (we buy Tesco), brush the tops with egg yolk or milk to make them shiny, and put them in the oven at 200 C for about 16 minutes... (I think that's right off the top of my head...)
